Stir everything together, cover, and stew in the oven for about 2.5 to 3 hours. Check on it regularly and add water or chicken stock as needed to keep the lamb from drying out.
Once the meat is falling off the bone and the sauce appears thick, your lamb shanks are ready! Take it out of the oven, taste it and add any salt and pepper if needed. Finish off with a dash of red wine vinegar.
For a complete meal, serve the lamb shanks with flatbread, steamed veggies, or garlic butter mashed potatoes.
