Preparation
In order to get the desired crisp on your pork belly, the first step is to create "one thousand holes" in the skin so that the fat will render. (You don't need to really do one thousand—"a lot" will do.)
Next it's time to give your pork a dry run- as dry skin crisps better than moist skin. Start by rubbing equal parts baking soda and salt into the skin—this will draw out moisture and set you up for success.
Now it’s time to give the meat a rest and let it dry overnight. After it’s rested for at least 8 hours, rinse well to remove the baking soda and salt.

Season and Cook
After rinsing, transfer your Flodins’ pork belly to a sheet pan topped with a wire rack.  Apply your seasoning to the meat side of the strip, leaving the skin bare. A delicious combo of Asian-inspired flavors are honey, lemon juice, Chinese five spice blend, and salt.

Put the pork in the oven at 350 F or 180 C for an hour and a half. After that, raise the temperature as high as your oven allows you to. Pay attention now, because you don’t want to overcook it. You'll know the belly's ready when the skin puffs and is super crispy, which will happen fairly quickly after raising the heat.
