End of Summer Pork Chops - Taste of Scan




September marks the end of summer; children back in school, and the days are starting to cool down. We are still, partially at least, in a summer mood. It’s the perfect time for an end of summer bbq, with Scan’s Flower-Fed pork and this recipe!

Often pork chops simply don't get the praise they deserve. When cooked right, this lean cut is delicious as a tender, flavorful main course. Always ensure you use high quality pork meat, like juicy and tender Scan flower-fed pork that is simple to cook to perfection.

These pork chops are amazingly tasty when grilled, but they are also good cooked in a very hot, heavy skillet on the top of the stove. After coating your pork with your seasonings and olive oil, cook the oil-coated chops for the same length of time in the open skillet as on the grill. On the grill, cook them close to your heat source.  If your grill doesn't have a lid, cook your pork about a minute longer on each side. When the meat is removed from the grill or skillet, be sure to let it rest for a good 5-10mins before serving- the pork will continue to cook in it’s own heat and the juices will redistribute- making your flower-fed pork perfectly tender and juicy.

Grilled Thyme Pork Chops
6 flower-fed pork chops from Taste of Scan (230 grams each)
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
1 teaspoon dried thyme leaves
2 tablespoons olive oil.

Preheat a grill, set on high. Mix your salt, pepper and thyme with the olive oil and brush across both sides of your chops. Be through- you can even use your (clean) hands to massage the oil mixture on. Place your pork chops on a very hot grill, about 2 to 3 inches from the heat. Cook for about 4 minutes on each side. Set aside in a warm place off the heat to rest for 5-10 minutes before serving.
