Celebrate Chinese New Year with Lucky Pork Dumplings

Lucky Pork Dumplings

Ingredients:
450 grams Scan Flower-fed Pork-- ground
1/4 teaspoon each salt and pepper
1 clove minced garlic
1 teaspoon minced fresh ginger root
2 tablespoons sesame oil
1 cup chopped green onions
Vegetables of your choice (Chinese cabbage, bean sprouts)
1-2 packages of dumpling wrappers

Directions:
1. Add all dumpling ingredients into a large bowl except for the wonton wrappers. Mix 
thoroughly.

2. Set out wonton wrappers, prepare a small bowl of cool water for sealing edges. Start 
heating a pot of salted water. Work on step 3 while salted water comes to a boil.

3. Spoon about 1 1/2 tablespoons filling in wonton wrapper. With fingertips, lightly wet edges 
with water. Firmly pinch edges. Repeat until all filling has been used.

4. Place dumplings in salted boiling water, and cook gently for about 10 minutes. Drain, then 
run cool water over your cooked dumplings to avoid sticking.

If you’d rather make soup, heat chicken broth instead of salted water. Add the pork 
dumplings to boiling chicken broth and cook until done. Serve dumplings in broth garnished 
with chopped parsley or vegetables as desired.
