Scan Pork for the Holidays-- Delicious and Healthy!

Mustard Pork Fillet with Herb Aioli

Ingredients
1kg Scan pork tenderloin
3 tbsp olive oil
2 tbsp Dijon mustard
1 bunch tarragon , chopped
200g jar good-quality mayonnaise
1 garlic clove, crushed
Zest and juice of 1 lemon

Directions
Heat oven to 180C

Rub the pork with a tbsp of oil, add salt and pepper to taste, then sear the outside of the meat on all sides in a hot frying pan.

Transfer the pork to a baking sheet, brush the outside with the mustard, then press on half of the tarragon and cook for 20 mins. Remove from the oven and cover with foil for 5 mins.

To make the aioli, mix the mayo, garlic, lemon zest and juice and remaining tarragon with salt and pepper to taste, then set aside. Slice the pork into thick slices and serve on a platter with a bowl of aioli to dip into and your family’s favorite side dishes.
