Scan’s Crunchy Crispy Skinned Omega 3 Pork Belly

This pork recipe is always a crowd pleaser, with the delicious combination of crunchy, crispy 
crackling and tender meat in an Asian-inspired marinade. While this recipe does take some 
time to prepare, with a little planning this meat recipe is a snap! The evening before serving, 
you’ll need about 15 minutes of prep work, followed by allowing the Scan Omega 3 Pork 
Belly to marinate in the fridge overnight. The next day you’ll need about another 15 minutes 
of prep time and after that you’ll simply need to check on the oven about every half hour till 
it’s done! Here’s the recipe:



Scan’s Crunchy Crispy Skinned Omega 3 Pork Belly
Serves 6

Ingredients:
1 tbsp five-spice powder
Sea salt  
2 tbsp oil of choice

Marinade:
1 cinnamon stick
2 tbsp five-spice powder
2 star anise
2 garlic cloves, chopped
2 spring onions, chopped
1 small red chilli, finely chopped
½ cup shoaling rice wine
3 tbsp soy sauce
3 tbsp hoisin sauce

Cooking Preparation (best done the night before serving)
First, score the skin of your Scan Omega 3 Pork Belly with a sharp knife, wipe dry and rub 
with sea salt. On the other side of your Scan pork belly (the side without skin), rub in 1 
tablespoon of five-spice powder. Set aside

Now it’s time to create your marinade by combining all the Marinade ingredients into a 
saucepan. Bring the saucepan to a boil, stirring frequently, then reduce the heat to low and 
simmer for about 5-10 minutes. You can add up to an extra ½ cup of shoaling rice wine if 
needed. Let the marinade cool, then pour into a large shallow dish then set your Omega 3 
Pork Belly skin side up into the marinade. You need to make sure to leave the skin 
completely exposed and dry-- the marinade must NOT cover the skin if you want it to be 
crispy and crunchy! Marinate the Omega 3 Pork Belly overnight in the fridge uncovered, as 
this will get the premium pork skin nice and dry, which makes for a much crisper crackling.

Cooking Instructions:
Turn your oven on to 230˚C or 450˚F.

As your oven heats up, remove the Scan Omega 3 Pork Belly from the marinade(keep the 
marinade!) and gently wipe dry- both sides. Lightly rub 2 tbsps of your oil of choice (peanut 
is recommended for this recipe) and then some sea salt over the skin and place the Omega 3 
Pork Belly in a roasting pan. Pour the marinade into the tin, around the sides-- again do NOT 
let the marinade cover the skin. If there is too much liquid either add a shallow wire rack or 
simply don’t add all of the marinade to the pan.

Roast the Omega 3 Pork Belly for 30-45 minutes until the skin is blistered and crisp. Lower 
your oven to 160˚C or 325˚F and roast for another 1 to 1 ½ hours until the internal 
temperature reaches 65°C / 145°F (with a light pink center) followed by a 3-5 minute rest 
time. Throughout the roasting process keep an eye on the bottom of the pan and add water (or 
any unused marinade) if the liquid dries out.

Serve slices of Crunchy Crispy Skinned Scan Omega 3 Pork Belly with rice and your favorite
